Thai Green Curry

Summa the stuff you'd need:

1 can of coconut milk
half a pack of that curry paste
basil
thai chili
fish sauce
brown sugar
meat (chicken, basa fish is good too, beef)
veggie - i like green bell pepper, eggplant, and sometimes mushroom or zuchinni
onions and garlic are optional.

You can buy this packet from Chinatown at Sunrise market for like 79cents. They have red and yellow as well. they carry it at other stores too. Check your local Asian grocers.

Heat up a wok with some oil, throw in the paste, throw in the meat, throw in the coconut milk. Then once meat is cooked, throw in the veggies, and cook for a bit. Season with fish sauce. Just follow whatever it says on the packet. I'm so lazy right now. This post was basically made so i can show off my new cleaver and knife magnet.

Garnish with Chili and Basil.

It's a Doilie kind of Day!

Yesterday was such a cranky moody day. This morning i decided not to waste today like i did the previous day. Today was going to be a lovely day. Been listening to upbeat music to get in a cheery mood! Went for lunch with my sister Diane, and on the walk ran into this:

A beautiful doilie chillin' out max with a dandelion! I left the doilie there cuz that's where it was meant to be. It really is a beautiful life though isn't it!

Here are some songs and videos that make me feel happy!

Something Else by Diamond Rings. This song is so cute. I didn't care for it at first, but now i'm so into it.

I love this song Here Comes Your Man by the pixies, but i also love Joseph Gordon Levitt's version in the movie 500 Days of Summer. this song is "about winos and hobos traveling on the trains, who die in the California Earthquake"

I'm also really hopped up on lavender oil and osmanthus oil.

Syringe Jello 'Shots'

Syringe jello shots for my trash rock themed birthday party last weekend. I don't remember much of it. I think that means it was a blast.

I like these Knorr pack over Jello cuz they tend to have more of an exotic flavour. but jello is fine too. I did Pineapple with the Malibu, and Honeydew with Stoli Blueberry.

You can get syringes w/o needles at any pharmacy for around 30cents a pop. these were 10ml ones.
For each packet of jello, use one cup of boiling water and one cup of liquor. I watered it down with more liquor cuz i was worried the jello might be too hard, and i like my drinks strong.
I only bought 40 syringes, so i had leftover jello for normal shots.

Creme Brulee Recipe sooo easy!

I love creme brulee so much. So much that one year, the girls at my old work got me a blow torch for my birthday. I love trying it at restaurants that offer it. So far the best iv'e ever had was at Sweet Revenge, and that's pretty much the best one aside from mine. Yeah, this recipe is all that and a bag of crisps!!! But i already knew that.

You will need:

  • 8 egg yolks (you can keep the whites in the freezer for future use)
  • 1/4 cup sugar
  • vanilla bean
  • 2 1/2 cup heavy cream (i use whipping cream)
  • blow torch (there are other ways to do this w/o torch, but its not FUN, so i will not tell u)
  • ramekins, or if you're cool like me, random dishes. i got these from daiso! the small ones make for great portion control.
  • baking pan
  • 10cups of FUN!

heat cream split vanilla bean til almost boiling. turn off heat. let sit for 15 minutes to infuse the vanilla bean.

scrape pods with knife along edge of pot, and mix with the cream. discard pod.

meanwhile, mix yolks with sugar

 assemble dishes in baking pan

slowly stir cream into egg mixturse. pour mixture back into pot through a strainer and divide into dishes

fill baking pan with warm water till almost but not too much to the top of the dish

throw into 350 degree oven for about 25minutes or until knife comes out clean. you know what i mean?

let cool. then keep in fridge for at least 2 hours. it tastes best a day after. even better the next next day!

throw some sugar on top and torch the hell out of it.

There are many things you can do with this recipe. Add cubes of pear or raspberries on the bottom. Mix with cocoa powder and chili. Lavender. Bacon.

Rice Crispy Squares Gourmet

My sister Diane Reyes offers me some rice crispies she had made, and it had cinnamon and candied pecans and cinnamon toast crunch in it. It was the best rice crispy i have ever had!

You can pretty much do anything to rice crispies. Add cocao powder, matcha powder, lavender, sea salt, gravy, anything really!

marshmallows, vanilla extract, rice crispy, pecans, vanilla bean, cimamnon, butter, FUN!
Pop knows what's up! Vanilla Bean, y'all.
saute pecans with a bit of butter and sugar

vanilla bean

melt 1/4c butter with vanilla bean and cinamnon, and 40 plus more marshmallows

do this at low heat

seriously. LOW HEAT. i cannot stress this enough. its the secret to chewiness power.

look at those beautiful specks of vanilla

i also put in some pure vanilla extract, cuz i like excessiveness

add 6 cups of rice crispies and the pecans.

butter up your spatula to smooth out the stuff into dishes to prevent sticking

share with your friends so they will like you more.

Let it cool. Eat. Enjoy. Cry. Dance. Smash it with your fist cuz it's too good of a thing to exist. Must destroy all that is good.

Shepherd's Pie sort of, with a Yorkshire Pudding

Back in highschool, Wednesdays meant shepherd's pie day at the cafeteria. It also meant it was my dad's turn to volunteer at the cafeteria, meaning i could ask him for 3 bucks to get the shepherd's pie. It was a simple yet divine westernized version of the traditional. Thick layer of ground beef and thick layer of freshly mashed potatoes and thick brown gravy. Iv'e tried the traditional style at Irish pubs, and never quite liked it as much. Just how i like some artificial flavorings better than the real thing, like taro, grape, sometimes strawberry. You can't just place real flavours and artificial flavours in the same ballpark. They should be appreciated in their own rights.

So this recipe is basic. I just throw in what i like and what i have.

if you want to make it exactly how i did, you will need:

  • ground meats (beef. this one i used lean, but if youre on death row, or have a really good work-out regime, then go ahead, spoil yourself and get non lean for extra flavour. you deserve it.)
  • frozen corn
  • the TRINITY
  • lots of garlic
  • seasonings (paprika, cayenne, basil, salt, pepper, garlic powder...)
  • gravy powder or gravy
  • instant mashed potatoes (i prefer doing real mashed potatoes, and i'll someday post that too, but i just didn't have the time for that. i was too busy staring off into the distance and into the eyes of the devil)
  • potato chips.
  • FUN!

i start off with sauteing the TRINITY and garlic and then add the meat and seasonings. add corn and a bit of gravy powder to thicken the juices towards the end.

After preparing the instant mash, put the meats in a thing, and then mash on top. I like to sprinkle cayenne and paprika on top cuz i like things spicy and colourful. At this point, you can throw chips from a safe distance.

let it sit for awhile.

Wasn't planning on doing this but WHAT THE HELL! YORKSHIRE PUDDING. WHY THE HELL NOT?
just 3 eggs, cup of milk, and cup of flour. i think. throw some butter and or olive oil in baking things (if u have meat fat, even better) throw the baking thing in a 450degree oven til it gets hot. take out of oven, throw in mixture, and throw back into oven and DO NOT OPEN THE OVEN DOOR after til the end.
Turn the kitchen light off and watch the pudding through the oven window. This is more romantic than sitting by a fireplace. I recommend putting into muffin tins or a wider pan. The centre of the pudding was too thick, but the sides were great. I may have used too much oil. But whatever.
